{"id":2182,"date":"2022-08-12T18:45:10","date_gmt":"2022-08-12T16:45:10","guid":{"rendered":"https:\/\/www.capocciabio.it\/non-categorizzato\/what-does-whole-grain-mean\/"},"modified":"2023-04-28T11:02:19","modified_gmt":"2023-04-28T09:02:19","slug":"what-does-whole-grain-mean","status":"publish","type":"post","link":"https:\/\/www.capocciabio.it\/en\/insights\/what-does-whole-grain-mean\/","title":{"rendered":"What does &#8220;whole grain&#8221; mean?"},"content":{"rendered":"\n<p>We have recently finished the harvesting of the <a href=\"https:\/\/www.capocciabio.it\/en\/produzione-biologica\/organic-cereals\/\">organic grains.<\/a><\/p>\n\n<p>Over the next few months, most will be ground in the slow-turning natural stone mill to produce organic flours and semolina, and from these also pasta, bread and baked goods.<\/p>\n\n<p>Many of these products will be <strong>whole grain<\/strong>. <\/p>\n\n<p>But what does it mean to eat whole grain products?<\/p>\n\n<p>A common definition of &#8220;whole grain&#8221; is that the flour is composed of the cereal grain (caryopsis), <span style=\"text-decoration: underline;\">in all its parts:<\/span><\/p>\n\n<ul class=\"wp-block-list\"><li>The outer shell, i.e., the bran<strong><\/strong><\/li><li>The <strong>endosperm<\/strong>, or the &#8220;pulp&#8221;<\/li><li>The embryo, or <strong>the germ<\/strong> of the grain<\/li><\/ul>\n<p>thus ensuring the presence of <strong>all the nutrients<\/strong> contained in the different parts of the grain.<\/p>\n\n<p>The <em>refined flours<\/em><sup>(1)<\/sup> are much richer in starch, poorer in bran, and devoid of germ: with the milling <em>Industrial<\/em> milling produces a flour that is more suitable for some pastry processing and long storage, but it also produces flours that are poor in protein and deprived of important nutrients.<\/p>\n\n<p>That&#8217;s not all: refined flours can be used to produce a fake whole grain, by the simple addition of bran or some wording in the packaging, such as <em>&#8220;rich in fiber.&#8221;<\/em><br\/>But such a flour is not as healthy and nutritious as a whole grain flour.<\/p>\n\n<p>How to recognize a <em>fake whole grain<\/em>? <br\/>To recognize a fake whole grain flour the ingredients must be read carefully: usually if there are statements such as &#8220;0 flour,&#8221; &#8220;00 flour,&#8221; or &#8220;bran,&#8221; <strong>it is not<\/strong> a whole grain flour. <\/p>\n\n<h2 class=\"wp-block-heading\">What are the benefits of the regular consumption of wholegrain foods? <\/h2>\n\n<p>Plenty of benefits, both from a nutritional and wholesome point of view. <\/p>\n\n<p>Besides having greater satiating power and being more effective in weight management, they assist intestinal functions, regulate blood sugar.
