Why is it better? Let&#8217;s see it briefly.<\/p>\n\n<!--more-->\n\n<h3 class=\"wp-block-heading\">1-The safe and nutritious ingredients<\/h3>\n\n<p>We use only grains from the <strong>fields<\/strong> we work ourselves: certified organic, with no use of pesticides or herbicides.<br\/>From these we produce our <strong>organic flours<\/strong>, which are stone-ground in a slow rotation to preserve all their nutritional properties.<br\/>With these flours we finally bake our <strong>bread<\/strong>.<\/p>\n\n<h3 class=\"wp-block-heading\">2 &#8211; The slow natural leavening.<\/h3>\n\n<p>We use only <strong>sourdough<\/strong>, which we renew daily.<br\/>The leavening process is slow: we employ at least <strong>20 hours<\/strong> between leavening and fermentation inside special cells that monitor every step of the process.<br\/>Very much like the cultivation and milling, our baking is a slow and <strong>completely natural<\/strong> process, without any artificial additives.<\/p>\n\n<h3 class=\"wp-block-heading\">3 &#8211; The quality and the shelf life of our bread.<\/h3>\n\n<amp-fit-text layout=\"fixed-height\" min-font-size=\"6\" max-font-size=\"72\" height=\"80\"><p>It is only through these processes that our bread, <strong>just like the bread of yesteryear<\/strong>: <\/p><\/amp-fit-text>\n<ul class=\"wp-block-list\"><li>It is a <strong>very easy-to-digest bread<\/strong>, both because of the high quality of the flours and the correct balance of acidity, hydration and temperature achieved through the natural leavening method.<\/li><li><strong>It will keep much longer,<\/strong> remaining fragrant <strong>for up to 4 to 5 days<\/strong> and allowing food waste to be minimized compared to the bread that is already hard after one day.<\/li><\/ul>\n<hr class=\"wp-block-separator\"\/>\n\n<p>We try to recover and uphold the values of the past, when bread was baked in the appropriate time within communities, after carefully monitoring every process, almost as if it were a ritual.<\/p>\n\n<p>That is why our bread cannot be compared to other types of bread.<br\/>With the Capoccia Bio bread, you really <strong>know what you&#8217;re eating<\/strong>.<\/p>\n\n<p>P.S.
