{"id":2360,"date":"2020-10-18T15:05:07","date_gmt":"2020-10-18T13:05:07","guid":{"rendered":"https:\/\/www.capocciabio.it\/negozio\/uncategorized\/organic-soft-wheat-flour-type-1\/"},"modified":"2025-06-18T09:12:09","modified_gmt":"2025-06-18T07:12:09","slug":"organic-soft-wheat-flour-type-1","status":"publish","type":"product","link":"https:\/\/www.capocciabio.it\/en\/negozio\/organic-flours\/organic-soft-wheat-flours\/organic-soft-wheat-flour-type-1\/","title":{"rendered":"Organic soft wheat flour type 1"},"content":{"rendered":"<p><strong>Organic soft wheat flour, type 1<\/strong>, derived from the milling of organically grown soft grains from an entirely in-house certified supply chain.<\/p>\n<p>It is derived from modern soft grains, and therefore it contains greater amounts of gluten, which gives it greater &#8220;strength&#8221; in doughs i.e. a higher liquid absorption capacity.<\/p>\n<p>Having greater elasticity and resistance to leavening, modern soft grain flour is usually used for long leavening doughs since its characteristics prevent the dough from &#8220;deflating&#8221;: bread, pizza, cakes (panettone, colomba, croissants..) even in combination with organic ancient grain flours in order to achieve a nutritionally perfect result.<\/p>\n<p>Type 1 flour contains a larger amount of bran and wheat germ, the most nutrient-rich parts, than refined flours. Since it is the finest and most workable flour obtained from the stone mill, it is also the most kneadable.<\/p>\n<h3>Slow-rotation stone-ground whole grain flour<\/h3>\n<p>Our organic flours are <strong>ground by natural stone<\/strong>, thanks to millstones made of granite imported from nearby France, in our slow-turning mill.<\/p>\n<p>As the grains are not heated during milling, our process allows us to maintain all the nutritional characteristics of the resulting flours.<\/p>\n<p>This way we spend more time on the production, but as with all good things produced with love &#8230;
