Planting: the first gesture of trust

In the fall, when the fields breathe again after the summer, the sowing of our ancient grains and organic cereals begins.
It is a gesture that has been repeated for generations, but each year brings with it a new promise: that of guarding the land without forcing it, choosing seeds suited to the climate and soils of Gualdo Tadino.
We do not use chemical fertilizers or herbicides, but only rotations, compost and light tillage that keep the fertility of the soil alive.
Sustainability, for us, is not a label: it is a daily method.

Harvesting and processing: everything stays at home

When the fields ripen, the harvest passes directly to our storage and stone mill.
Here the milling is slow, at low temperature, to preserve the grain’s fragrances, minerals and vitamins.
From the flours come bronze-drawn and low temperature-dried pastas, baked goods and artisanal desserts.
Every step takes place in our factory, which is solar-powered and designed to be zero-energy.
That’s how the supply chain remains consistent, transparent and controlled-from seed to ready-to-sell package.

The oven and the table: where nature meets healing

In the Capoccia Bio bakery, we work every day with sourdough, freshly milled flours and long rising times.
The result is breads, cookies and cakes that smell of wheat and keep the Umbrian artisan tradition alive.
Our task ends where that of those who choose to bring them to the table begins: families, chefs, neighborhood stores and businesses that share the same concern for real food.
Every product that leaves our workshop tells the same story: that of a supply chain that has no breaks, no shortcuts.

The rhythm of nature as a guide

On our farm, technology does not replace nature, but accompanies it.
We monitor humidity, temperatures and production cycles, but we remain faithful to the natural rhythm of the seasons.
This balance is what allows us to guarantee high-quality organic products with minimal environmental impact and a strong connection to the land.
Following nature also means accepting that every year will be different – and that is the most beautiful part of our work.

Our supply chain is not just a production model, but a way of living and doing business: slow, transparent and respectful.
