
Classic and Rustic organic pasta
The new “Classica” and “Rustica” organic pastas are about to arrive.
Made with our organic flours from traditional durum wheat grown in our organically farmed fields.
Both types of pasta are made from stone-ground semolina, in order to leave the richness and the nutritional properties of the organic grains unaltered.
For the same reason, the pasta undergoes a slow drying process, which is a slower process than the industrial ones but, as with milling, it enables the characteristics to be preserved even in this part of the transformation process.
Finally, both the Rustic and Classic types of pasta are bronze-die extruded, allowing that surface porosity that confers them a greater ability to capture flavors and seasonings.
Why the two new organic pasta lines?
We have tried to meet the demands of our customers, whom we talk to every day, on the subject of pasta for regular consumption.
In particular about enriching our range of organic pasta with more traditional types.
And so here is a “Classic” one, suitable for those who are new to the organic world, or for those who have children who are sometimes reticent to try new flavors.
Accompanied by a second more “Rustic” type, made from the same grains but with a semi-whole grain semolina, which is now even more interesting from a nutritional point of view.
The Classic Organic Pasta
Here is a type of pasta that tastes like pasta: artisanal, but with the true scents and flavor of homemade pasta made with quality flours, just like in the old days.
Of all our organic types of pasta, this is the one with the most traditional taste, which is sure to please every palate.
With the classic pasta, we can satisfy those who do not want to compromise on the safety and nutritional richness of the organic, without looking for pastas that are too “special”.

The Rustic Organic Pasta
From the same grains as the Classic pasta, but with a semi-whole grain milling, we obtain the Rustic pasta type.
A coarser pasta, suitable for large formats-such as paccheri-and that pairs even better with full-flavored sauces.
And with the added benefit of a semi-whole grain semolina, which is nutritionally the best milling for our bodies.
