Description
A very old cereal species, closely related to wheat.
Spelt is low in essential amino acids, but very high in fiber, vitamins and minerals.
Organic spelt is best eaten in soups or as a salad paired with seasonal vegetables.
By pearling, the surface of the spelt seed is abraded, thus reducing the amount of fiber compared to dehusked spelt, and allowing it to be cooked without soaking.
Cooking time is about 25 minutes
