Description

Organic Bioadapt ancient grain flour, whole grain, derived from the milling of organically grown ancient soft grains.

It is obtained from the milling of the so-called “evolutionary mixture” Bioadapt, that is, a population of 5 ancient grains (Andriolo, Frassineto, Gentil Rosso, Inallettabile, Verna) that, once sown in its pure form in the Umbrian Apennine territory, has adapted to it to the point of becoming a uniquely suitable wheat:

  • to be organically grown.
  • to constitute a model of short supply chain and low environmental impact agriculture.
  • to produce bread and bakery products with beneficial health characteristics.

Whole-wheat flour contains a higher percentage of bran than finer flours (type 1 and type 2), with all the added benefits of a higher fiber content. These include: improved intestinal absorption, reduced fat absorption and insulin index, and a greater degree of satiety. It can be used in pure form for more rustic products, or mixed with a finer flour such as type 1 and type 2.

Slow-rotation stone-ground whole grain flour

Our organic flours are ground by natural stone, thanks to millstones made of granite imported from nearby France, in our slow-turning mill.

As the grains are not heated during milling, our process allows us to maintain all the nutritional characteristics of the resulting flours.

This way we spend more time on the production, but as with all good things produced with love … we take the time to make them in the best way possible.

Our entire organic supply chain is based in the green hills of the Umbrian Apennines, but above all it is an exclusively in-house supply chain.

It means we have full quality control of every stage of production, from sowing to harvesting, from milling to packaging.

This is a further guarantee of the traditional values already inherent to organic farming: no chemical treatments, no improvers or preservatives, respect for the earth, and the safety and wholesomeness of the food produced.
